I've been cooking a lot lately

New recipes and experimenting. It's kinda fun. Tonight, I made some chicken corn chili and Mike lovvvvvvvvvvveeeedddddd it. Here's the recipe:

1 can of diced tomatoes
1 can of whole kernel corn
1 can of pink or red beans
1 package of thinly sliced chicken cutlets (about 1.5 lbs)
1 package of chili seasoning
corn tortilla chips
shredded cheeses

Cut and dice chicken in small squares. Place chicken in pan on low heat and cover. Add desired seasonings to the chicken. (You can marinate your chicken before if you like). Cook chicken until tender. Mix beans, tomatoes, chili seasoning and corn together in a separate pot. Cover and cook on low heat. Add chicken. Mix and let sit over low heat for 10 minutes.

Serve over tortilla chips and top with shredded cheese.

Goes well with a nice brown or amber ale. Enjoy!
